Swiss-Dutch nutrition company launches ModulaSENSE® maskers targeting molecular-level sensory challenges in Vertis™ CanolaPRO® formulations. The receptor-based technology addresses bitterness, astringency, and licorice notes in ready-to-mix beverages and protein bars.
dsm-firmenich has introduced a specialised range of ModulaSENSE maskers designed to optimise the sensory profile of its plant-based protein ingredient, Vertis™ CanolaPRO, in ready-to-mix (RTM) beverages and protein bar applications. The masking technology employs receptor-based mechanisms to target specific off-flavours at the molecular level.
Molecular targeting approach addresses protein sensory limitations
The newly developed maskers utilise cutting-edge flavour science to intercept unwanted sensory compounds before they activate key taste receptors. This molecular intervention strategy enables manufacturers to incorporate higher concentrations of Vertis CanolaPRO whilst maintaining acceptable organoleptic properties in finished products.
Vertis CanolaPRO represents a complete rapeseed protein isolate with a protein digestibility-corrected amino acid score of 1.0, containing all nine essential amino acids. The ingredient demonstrates superior functional properties including solubility, foaming capacity, emulsification, and gelation characteristics. However, like many plant proteins, it presents inherent sensory challenges that can limit application potential.
Technology targets multiple sensory pathways simultaneously
The ModulaSENSE platform addresses three primary sensory concerns: bitterness perception, astringency response, and licorice-like flavour notes. By targeting multiple sensory pathways concurrently, the technology enables precise modulation of protein-derived off-flavours without compromising nutritional integrity.

Sustainable protein valorisation from existing supply chains
Vertis CanolaPRO represents an upcycled ingredient derived from existing canola oil production side streams, addressing sustainability concerns whilst delivering complete protein nutrition. The ingredient carries major allergen-free status, positioning it strategically within the expanding plant-based protein market across North America and Europe.
Market availability and application expansion
The ModulaSENSE maskers has been available in North America since July 2025, with European market introduction scheduled for September 2025. Initial development has focused on RTM beverage and protein bar applications, with plans for expansion into additional product categories.
