Ecotrade expands range of bakery additives with focus on delayed fermentation technology
Polish manufacturer Ecotrade has expanded its portfolio of bakery ingredient solutions, with particular development in the area of postponed baking additives. The company, which has been operating since 1993, offers more than one hundred different products including mixes, improvers and additives designed to enhance production efficiency and product quality.
Clean label formulations available
Ecotrade has developed a comprehensive range of bread mixes covering wheat, rye, graham, corn and spelt varieties. The company reports that many products within their portfolio contain additional functional ingredients such as seeds, grains, dried vegetables, malts and acids, with several formulations serving as sources of fibre or protein.
“We offer more than a hundred different items, including bakery mixes, improvers, baking additives, postponed baking additives, and decorative sprinkles. We also have products marked as a ‘clean label’ what guarantee using the best and natural ingredients,” says the company.
The manufacturer’s product range includes both concentrated and non-concentrated mixes. Notably, they have also developed special-purpose formulations designed to address specific dietary requirements, including low-gluten, gluten-free, low glycaemic index, and flour-free bread variants.
Postponed baking technology
According to the company, one of their fastest growing product categories is additives for postponed or frozen baking applications. This technology allows bakeries to prepare products that can be baked when convenient rather than immediately after preparation.
A key product in this category is ICER STABIL, a 3% baking additive based on an enzyme complex. The company describes this as offering “the highest quality bread and appropriate organoleptic characteristics” while maintaining production repeatability without requiring changes to existing production protocols.
The manufacturer states that “delayed fermentation allows you to obtain bread of exceptionally high quality, which results in a delicate crumb and longer freshness.”
Production efficiency solutions
Ecotrade’s range of improvers and baking additives has been developed to enhance production economics, repeatability and stability. The company highlights Super Quick Plus as one of its bestselling products – a 4% baking additive applicable to wheat, rye and mixed formulations.
This particular additive incorporates dried wheat acid durum, which the company claims “incredibly adds great flavour to the final products.” It also contains dried yeast. The versatility of this ingredient is demonstrated by its application in multiple product types including focaccia, baguette, buns, bread and ciabatta.
Quality recognition
The company reports that its product range has received industry recognition, with numerous products having been “awarded many times for their taste and health benefits with medals and distinctions at fairs and other industry events.”
Ecotrade emphasises that its IFS Food certification guarantees compliance with EU quality and safety standards. This certification is significant for food manufacturers as it demonstrates adherence to internationally recognised food safety protocols.
