Galactic launches low-dust granulated vinegar for improved food preservation processing

Galactic has introduced Galimax Flavor™ V-100 Pearls, a free-flowing, low-dust granulated vinegar preservation ingredient designed to combine antimicrobial efficacy with improved handling characteristics for food manufacturing lines. The product is being showcased this week at IFT FIRST 2026, taking place in Chicago, Illinois, from 12 to 15 July.

A pearl format built for processing efficiency

Galimax Flavor V-100 Pearls were developed to deliver the same antimicrobial efficacy and mild sensory profile as standard powdered vinegars already on the market, but in a granulated, low-dust format. The product is a fermentation-derived preservative solution aimed at extending food freshness and safety while addressing common production-line handling issues associated with fine powders.

Compared with conventional vinegar powders, the pearls are engineered for improved handling and processing. The uniform, coarse granules are described as virtually dust-free, which Galactic says reduces product loss, cleaning burden and operator exposure on the production line.

Improved flowability and dosing accuracy

According to Galactic, the pearls offer approximately 30% higher bulk density than standard powders, along with improved flowability, achieving a full classification improvement in both Carr Index and Hausner Ratio. These characteristics are intended to support more accurate dosing and more efficient handling during formulation.

The pearls are also resistant to caking, helping maintain ease of use over time, and reconstitute more than twice as fast as the conventional powdered format. In application, they disperse cleanly in water, brines and marinades, with Galactic stating this eliminates clumping and “fisheyes” during formulation across a range of recipes and food matrices.

Same active ingredient, no reformulation required

Galactic notes that Galimax Flavor V-100 Pearls use the same active ingredient and concentration as its traditional powdered vinegar solutions, with identical maximum solubility. In the US, the ingredient can be declared simply as “vinegar” on product ingredient lists, meaning manufacturers can substitute the pearl format without reformulation or revalidation.

Efficacy against Listeria in RTE meats

Galactic has also highlighted validated studies demonstrating that 0.75% of Galimax Flavor V-100 Pearls inhibit Listeria growth in ready-to-eat chicken deli meats, underscoring the company’s continued focus on food safety alongside operational efficiency.
