GNT showcases plant-based EXBERRY colours in rainbow concha cookie demonstration
Euromed presented its newly launched products made from functional Mediterranean fruit and vegetable extracts at this year’s Vitafoods Europe event. The range now also includes lemon extracts, all of which are sustainably sourced and gently processed with Pure-Hydro Process™ water-only extraction technology.
GNT presented innovative applications of its plant-derived EXBERRY colour portfolio through vibrant concha cookie concepts at the International Baking Industry Exposition (IBIE) 2025 in Las Vegas from 13-17 September.
Natural pigment extraction delivers bold bakery applications
The EXBERRY colour range utilises non-GMO fruits, vegetables, and plants as source materials to generate an extensive spectrum of hues for bakery and snack applications. The technology enables colour development across cakes, breads, biscuits, snacks, decorative elements, fillings, and coating systems.
At the trade exhibition, GNT demonstrated sugar cookies inspired by traditional Mexican pan dulce, featuring distinctive ‘shell’ toppings in bright shades derived from natural sources including red potatoes, peppers, carrots, and spirulina.
Technical formulation support and synthetic replacement strategies
GNT’s technical specialists provided consultation on plant-based colour formulation opportunities throughout the event, including guidance on synthetic dye replacement protocols. The team also presented current colour trend analysis specific to the bakery and snack manufacturing sectors.
“Our innovative cookie concepts show how EXBERRY can deliver the bold, playful colours that consumers expect whilst keeping labels simple,” said Jeannette O’Brien, VP of Sales and Marketing at GNT USA. “We partner with manufacturers at every stage of product development to make the switch to plant-based colours straightforward and effective.”
The EXBERRY portfolio represents natural colouring solutions derived from fruits, vegetables, and edible plants, targeting food and beverage industry applications with sustainability-focused formulation approaches.
