Crespel & Deiters puts colour into the crumb coating conversation

Ibbenbüren-based starch and protein specialist Crespel & Deiters has launched Lory® Crumb Colored, a range of coloured crumbs for breading and toppings formulated with natural colorants. The crumbs are designed to hold their colour through cooking while remaining flavour-neutral, giving product developers a new tool for visual differentiation without altering recipes.

A palette built for processing

The range is available in green, pink, yellow, orange and white, and the crumbs can be used individually or blended. Crespel & Deiters states that the crumbs are suitable for coating meat, poultry, fish, vegetables, cheese and plant-based products, as well as for topping baked goods and snacks, positioning the range for both industrial manufacturing and convenience or foodservice segments. The company notes the product can also be used to support limited editions and promotional campaigns.

Lory Crumb Colored is sugar-free and made with colouring foods. According to the company, the crumbs create a visual effect without affecting the taste of the finished product, and colours remain stable throughout preparation and clearly visible in the end product.

Colour retention and blending behaviour

A key formulation claim concerns how the crumbs behave when combined with conventional breadcrumbs. Crespel & Deiters says that when blended with standard crumb, Lory Crumb Colored does not bleed and remains clearly visible, which the company states enables targeted patterns, coverage and colour accents in finished products.

“Colored Crumbs give product developers and marketers a tool that helps attract attention and makes products stand out from the crowd,” said Birgit Wessner, Product Manager at Crespel & Deiters. “Colour becomes a communication tool for brands, occasions and target audiences. And because the natural colorants do not affect the flavour, such creative freedom does not require any recipe adjustments.”

Formulation flexibility for limited editions

The company points to a range of applications for the crumbs beyond standard breading, including toppings for rolls, pretzel products, snack buns and finger foods. It also highlights potential uses in seasonal promotions, co-branded products, team or national colour themes, and campaign-linked limited editions. Crespel & Deiters states that the crumbs can be incorporated into existing production processes and breading lines, and that when multiple colours are used within a single application, they remain stable and deliver reproducible results at industrial scale.
