Report ties farm economics to consumer health data

The End of Cheap Food, authored by Kristine Root, founder and chief strategist of Socha Branding, connects farm economics, consumer health trends, CPG growth data and emerging food science to argue that the market is rewarding a different set of signals than it did a generation ago.

The report notes that US household spending on food has fallen from roughly 18 percent of income in the 1960s to 10–11 percent today, even as healthcare spending rose from approximately $100 billion in 1970 to nearly $5 trillion in 2023. Diet-related chronic disease is estimated to account for around 85 percent of that healthcare spend, a figure the report attributes to Tufts University research.

“The food system did not fail. It delivered exactly what it was designed to deliver,” said Root. “The problem is that the market has changed. The next era of growth will belong to companies that understand and deliver what people value now.”

Insurgent brands capture disproportionate growth

Citing Bain & Company research, the report states that insurgent food brands generated more than 27 percent of category growth in US consumer packaged goods (CPG), the sector covering branded food, beverage and household products sold in retail packaging, despite holding less than 1 percent of market share collectively. Root points to companies such as Alter Eco, Niman Ranch and Makers Mark as examples of brands building on ingredient integrity and sourcing transparency rather than price competition.

Consumer research cited in the report reinforces the shift towards processing as a purchase consideration. Eight in ten Americans now say they factor in the level of processing when choosing food, according to IFIC’s 2025 Food & Health Survey, and familiarity with the term “ultra-processed food” reached 44 percent in 2025, up 12 points on the prior year.

Metabolomics and accredited labs make nutrient density measurable

For food scientists, the report’s central technical claim concerns measurement infrastructure rather than consumer sentiment alone. It argues that advances in mass spectrometry, metabolomics and ISO/IEC 17025-accredited laboratory testing are allowing nutrient density, defined as the concentration and diversity of essential nutrients and bioactive compounds in a food, to move from exploratory research into practical, product-level verification.

The report references the Periodic Table of Food Initiative’s work cataloguing food compounds across crops and growing conditions, alongside published studies (van Vliet et al. 2021; Ahsin et al. 2025) indicating that biologically active, pasture-based production systems can yield greater metabolomic diversity and higher concentrations of compounds including fatty acids and antioxidants.

The report also revisits Davis et al.’s 2004 analysis of USDA food composition data, which found statistically significant declines in several nutrients, including calcium, iron, vitamin C and riboflavin, across 43 garden crops between 1950 and 1999, attributing the trend to breeding and agronomic priorities focused on yield rather than nutrient content.

Consumers report confusion despite stated intent

Despite rising interest in freshness, minimal processing and nutrient richness, the report cites International Food Information Council and McKinsey research showing that consumers struggle to identify higher-quality products at shelf level. Root frames this as a visibility problem rather than a motivation problem.

“When shoppers can’t clearly identify meaningful differences in quality, health impact, ingredient integrity or processing, they default to safer and simpler signals: lower price, familiar brands or short-term promotion,” Root said.

Implications for food scientists and engineers

For those working in food formulation, processing and quality assurance, the report’s argument has direct implications: as nutrient density testing becomes more standardised and accessible through accredited labs, sourcing, processing method and formulation decisions may become more directly traceable to marketable, verifiable outcomes rather than relying solely on ingredient-list claims or “clean label” positioning.

Root frames the broader thesis as systemic rather than tied to a single ingredient trend or technology.

“This is not about chasing a trend or one technology,” Root said. “It is about seeing the system more clearly. Agriculture, nutrition, consumer behaviour, supply chains and brand strategy are all connected. The next era will reward those who can make real value visible and easier for people to recognize.”
