Beer stabilisation product

, 20 August 2020/in Product news /by 3wmedia

Beer stabilisation product
Brewers Clarex is a highly successful enzymatic concept for beer stabilisation, which enables brewers to effectively stabilise beer, whilst increasing production capacity, and reducing their energy costs and carbon footprint. The product effectively prevents chill haze formation, while enabling brewers to significantly reduce or completely remove the costly, time-consuming and environmentally damaging sub-zero temperature stabilisation stage from their brewing processes. It is easy to use and requires no capital investment unlike current stabilising agents, thus simplifying brewing operations. It also enables sustainable production without generating disposal waste – resulting in a up to 8% reduction in the environmental impact of beer stabilisation when compared to the use of classical powder stabilisers, such as silica gel and PVPP (polyvinylpolypyrrolidone). In addition, Brewers Clarex is compatible with cross-flow membrane filtration technology, for a completely powder-free beer manufacturing process.

Advances in thermal and non-thermal food preservation

, 20 August 2020/in Product news /by 3wmedia

Ed by Gaurav Tewari and Vijay Juneja
Pub by Blackwell, 2007, pp 288, €148.50

The fields of food microbiology and food process engineering encompass a wide variety of microorganisms, including spoilage, probiotic, fermentative
and pathogenic bacteria, fungi, viruses and parasites. While various books address different aspects of food microbiology, until now a single book has not covered all microbial inactivation processes with emphasis on emerging trends and commercialisation of novel food preservation and processing techniques. Providing current, definitive and factual material written by experts on different thermal and non-thermal food preservation technologies, Advances in Thermal and Non-Thermal Food Preservation emphasises inactivation of microorganisms through the application of traditional as well as newer and novel techniques and their combinations. Chapters cover thermal food preservation techniques (e.g., retorting, UHT and aseptic processing), minimal thermal processing (e.g., sous-vide processing), and non-thermal food preservation techniques (e.g., high pressure processing and pulsed technologies). Special emphasis is given on the commercial aspects of non-conventional food preservation techniques. As the most comprehensive and contemporary resource of its kind, this book is the definitive standard in describing the inactivation of microorganisms through conventional and newer, more novel techniques.

Automating the flavour/fragrance laboratory

, 20 August 2020/in Product news /by 3wmedia

Rudolph Research Analytical have recently released an updated version of their multi parameter flavour/fragrance analysis system. that measures specific gravity, refractive index, optical rotation and colour in a run of up to 240 samples without operator intervention. There are two key features that make the system popular with labs. Firstly, the system can be customized to take the sample directly from existing bottles, allowing the QA lab to skip the decanting step. Secondly, since none of the tests are destructive, over 90% of the sample can be returned to the bottle for reuse. This is particularly important when the sample is very expensive or when only a limited sample quantity is available.

Botanical extracts for jet lag symptoms

, 20 August 2020/in Product news /by 3wmedia

Botanical extracts for jet lag symptoms
Especially created for people battling symptoms caused by circadian dysrhythmia, a range of ingredients is offered by Frutarom that helps to balance the body’s inner clock. A confused circadian rhythm causes stress symptoms including daytime fatigue, exhaustion, disturbed sleep, digestive disorders and decreased mental and physical performance. This is especially obstructive because people – particularly business travellers – often have to be at their peak after a long flight. Frutarom’s “Jet Lag Campaign” is aimed at manufacturers of nutraceuticals and functional foods who want to create products for these target groups. The campaign includes extracts of blackcurrant, schisandra, fenugreek, wild green oat, lemon balm and red vine leaf. Each of these targets specific jet lag symptoms, such as concentration difficulties, stress management, sleep disorders, digestion problems, tired eyes and heavy legs. Depending on the individual product concept, the extracts can be used alone or in combination.

Antibiotic residue test – official in the Netherlands

, 20 August 2020/in Product news /by 3wmedia

Delvotest T
DSM Food Specialties’ Delvotest T was chosen by QLIP, Dutch partner in quality assurance in the agrofood chain, as the national reference test to detect antibiotic residues in milk. The broad spectrum test was selected because of its high sensitivity and reliability. The test is fully compliant with Dutch dairy regulations, promoting a high quality milk supply throughout the whole dairy chain, from farmer to dairy to consumer. QLIP is commissioned by Dutch dairy companies to determine the composition and quality of farm milk samples. The analyses they perform meet the specific requirements of the official Dutch dairy regulations and detect the most relevant residues at or below the European Maximum Residue Levels (MRLs). Delvotest T is a broad spectrum test which identifies a variety of antibiotics at or below EU MRLs with higher sensitivity for tetracyclines than any other microbiological screening test. QLIP selected Delvotest T because the test is closest to the aimed detection level and because of its robust performance and consistent results. In the Netherlands, there is a successful programme in place to reduce the usage of antibiotics in general. A test like Delvotest T is an important tool to safeguard the suitability of milk that forms the basis for the broad range of Dutch dairy products.
